Today, August 5, is National Oyster Day! Oysters are a sustainable food source and a keystone species providing additional habitat for other marine life and improving water clarity. Healthier waters mean a more resilient and vibrant ecosystem, enhancing the natural beauty that defines Connecticut, while supporting a diverse, successful shellfish industry.
Connecticut's shellfish harvesters reported 2023 sales of 275,000 bags of oysters valued at $14.6 million dollars. The state’s shellfish industry provides over 300 jobs statewide. More than 61,000 acres of shellfish farms are now under cultivation in Connecticut’s coastal waters.
